Tofu Scramble Tacos Recipe (Easy, delicious and vegan!)

One of my favorite breakfasts these days is tofu scramble, and the other day I made easy, delicious tofu scramble tacos, so I figured I’d make a little video!

If you’re a new vegan, you will be glad to know that through practice, you can get tofu scramble to taste pretty much just like scrambled eggs, but even better because you’ll know it’s cruelty-free and vegan!

Here is the recipe:

You’ll need:

  • 1-2 tsp of coconut oil
  • 1 cup of diced bell peppers (I used a variety of colors)
  • Half an onion, diced
  • 1/2 cup of sliced mushrooms
  • 1 small tomato, diced
  • 1 block of tofu (I usually use firm, but for this video I used soft, because it was all I had. It worked great!)
  • A couple handfuls of shredded vegan cheese (optional)
  • Corn tortillas
  • 1 avocado, sliced, for topping

Spices I used:

  • 1/2 tsp of salt (or to taste)
  • 1/4 tsp of pepper (or to taste)
  • 1/2 tsp of garlic powder
  • 1/2 tsp tumeric
  • 1-2 tbs of nutritional yeast

Instructions:

  1. Add coconut oil to a frying pan, over medium heat, and when it’s hot add the diced bell peppers and onion.
  2. To one side of the pan, add the tofu, crumbling it with your hands.
  3. Add the salt, pepper, garlic powder to the tofu, stir it in.
  4. Add the tumeric and nutritional yeast, continue to stir until the tofu turns a nice shade of yellow, like scrambled eggs.
  5. Mix the tofu with the peppers and onion.
  6. Add the mushrooms and diced tomato, then lower the heat.
  7. Heat up the corn tortillas, and set aside the tortillas in a bag to keep them warm.
  8. Add the shredded vegan cheese.
  9. Get the avocado slices ready.
  10. Put the tacos together, top them with the avocado slices, and enjoy!
